Another easy recipe alert!

Roasted Tomatoes with Shrimp and Feta

5 large tomatoes
3 tablespoons olive oil
2 tablespoons minced garlic
salt (I use sea salt for everything, but kosher salt would also be good)
freshly ground pepper
1 1/2 lbs medium shrimp, peeled and deveined
1/2 cup chopped fresh parsley
2 tablespoons lemon juice
1 cup Feta cheese (I used the kind seasoned with garlic and herbs, but any kind will work)

Preheat the over to 450 degrees. Take the tomatoes and cut them into eights. Place them in a large baking dish and spoon the olive oil over them. Sprinkle a good amount of salt and pepper over them and toss. Place dish on top rack of the oven and roast for 20 minutes. Remove dish from oven and stir in shrimp, parsley and lemon juice, then sprinkle the feta on top. Put it back in the oven (same temperature) for another 10-15 minutes until shrimp are done.

Serve it with crusty bread or over some pasta. I served it over whole-wheat spaghetti and it was great! Let me know if you try it out and if you like it!
