Bryan and I have been trying to eat more fish lately, so I have been trying out new fish recipes. The one I made tonight was the easiest thing ever and it was great, so I have to share it.
Pesto Salmon
Ingredients:
2 Salmon Fillets (about 6 oz each)
pesto (make your own if you are industrious, or be lazy like me and buy the kind already made from HEB. This time I used a sun-dried tomato pesto made by Tex-a-France.)
-Get an 8x8 square baking dish and spray it with cooking spray
-spoon 3 tablespoons of pesto into the dish and spread it around
-sit the salmon on top of the pesto
-spread the rest of the pesto over the salmon
- bake it on 400 degrees for 20 minutes
Easiest thing ever! I served it with some snap beans and sweet corn on the cob and we loved it.

Welcome to the world of blogging. It is so addictive. I have been gone the past two days and I though about checking blogs quite often. Weird, huh? I love seeing pictures of your adorable Daphne. I must say she is the most precious little girl ever. Give her a kiss for me and my boys.
YUMMY! That sounds awesome! Unfortunately on a scale from 1-10, I would probably score a 2 because the last time I tried to cook fish I caught it on fire. Cooking for me is scooping out cantaloupe (sp) and watermelon hehe....
